How to Make Lemony Lemon Cupcakes

Here is a simple recipe for light and fluffy lemon cupcakes with lemon frosting. These are great for weddings, birthdays, anniversaries and family reunions, among other occasions, and are sure to please your dessert cravings as well. This recipe uses cream cheese and lemon zest, while others might use lemon instant pudding, for example. Add this to my Recipe Box.

    Beat together the butter, cream cheese, lemon zest and sugar, then beat in eggs until smooth and creamy.

    Gradually add the flour, baking powder and salt to the cheese mixture and beat with your mixer on low speed until just combined.

    Divide the batter evenly between 12 cupcake cups that have been lined with paper cupcake liners.

    Bake at 325 degrees F for about 25 minutes until firm to the touch or your cake tester comes out clean. Let cool 10 minutes in pan, then transfer to a wire rack.

    For lemon frosting: Mix thawed lemonade, whipped cream topping and condensed milk until thoroughly incorporated. Once your lemon cupcakes have cooled, frost with your lemon frosting.
