How to Cook With Agave Syrup

Agave syrup, or agave nectar, is made from the agave cactus, which is native to Mexico. Until recently, it was exclusively used in the process of making tequila. However, agave syrup can also be used as a substitute for maple syrup on pancakes and as a natural substitute for sugar while cooking. Agave syrup is all-natural, which makes it perfect for those following a vegan diet. Agave syrup is also approved as a sweetener for Type II diabetes sufferers, because it has a low glycemic index, meaning it doesn't raise blood glucose levels the same way table sugar does. It also contains calcium, vitamins and minerals, making it a much healthier choice than sugar.     Read your recipe, and determine the total amount of liquid ingredients it calls for. Decrease this total amount by one quarter when using agave syrup. This will ensure the right consistency of whatever dish or dessert you are cooking or baking.

    See how much sugar is needed for the recipe. Add a quarter less agave syrup than the amount of sugar needed. For instance, if the recipe calls for one cup of sugar, add three quarters of a cup of agave syrup.

    Decrease the cooking temperature by 25 degrees. This will prevent the agave syrup from getting too hot and burning.
